  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (or nut cheese alternative)

Instructions

  1. Preheat your oven to 400°F (200°C). Season sea bass fillets with salt and pepper.
  2. In a small bowl, mix minced garlic, lemon zest, lemon juice, and melted butter.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Cook the sea bass fillets for 2-3 minutes per side until golden brown. Spoon the lemon-garlic mixture over the fish.
  4. Transfer the skillet to the oven and bake for 8-10 minutes until the fish flakes easily.
  5. For creamed spinach: In another skillet, melt butter over medium heat. Sauté chopped onion and garlic until softened. Add spinach until wilted, then stir in heavy cream, Parmesan cheese, salt, pepper, and nutmeg; cook until slightly thickened.
  6. Serve creamed spinach on plates topped with sea bass and garnish with fresh parsley.
