Ingredients
- 5-pound boneless beef roast (flat-iron, chuck, or bottom round), trimmed of fat
- 1/3 cup extra virgin olive oil
- 2 medium onions (quartered)
- 3 large carrots (peeled and cut into 2-inch chunks)
- 4 stalks celery (cut into 2-inch chunks)
- 6 cloves garlic (crushed and peeled)
- 2 sprigs fresh rosemary
- 6 large fresh sage leaves
- 1/4 teaspoon freshly grated nutmeg
- 1 teaspoon black peppercorns
- 1 cup dried porcini mushrooms (rinsed)
- 2 cups beef stock
- kosher salt (to taste)
Instructions
- Preheat your oven to 250°F. Season the beef roast with half of the kosher salt. In a Dutch oven, heat olive oil over medium-high heat and brown the roast on all sides for about 8 minutes. Remove from pot and set aside on a platter.
- Add onions, carrots, celery, and garlic to the pot; cook until softened (about 6 minutes). Stir in rosemary, sage leaves, nutmeg, peppercorns, and dried porcini mushrooms; cook for another 3–4 minutes.
- Return the seared roast to the pot alongside the vegetables. Pour in apple vinegar and enough beef stock to partially submerge the roast.
- Cover and heat until steaming but not boiling; place in the oven. Braise for about 3 hours, turning every 30 minutes until fork-tender.
- Once cooked, remove meat and skim excess fat from braising juices; strain through a sieve into a container.
- Slice cooled meat and serve drizzled with sauce.
