Instructions
- Boil sweet potato chunks in salted water until fork-tender, about 15-20 minutes. Drain well.
- In a mixing bowl, mash the sweet potatoes until smooth but slightly chunky.
- Add the rinsed black beans to the mashed sweet potatoes and mix until combined, leaving some beans whole for texture.
- Stir in lime juice, onion, garlic, breadcrumbs, and cilantro (if using). Season with salt and pepper.
- Shape the mixture into patties about half an inch thick and place them on a lined baking sheet.
- Preheat your oven to 400°F (200°C) and bake for 25-30 minutes until golden brown, flipping halfway through.
