  • 1 can (15 oz) black beans, rinsed and drained
  • 2 tbsp freshly squeezed lime juice
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup plain breadcrumbs
  • ¼ cup fresh cilantro, chopped (optional)

Instructions

  1. Boil sweet potato chunks in salted water until fork-tender, about 15-20 minutes. Drain well.
  2. In a mixing bowl, mash the sweet potatoes until smooth but slightly chunky.
  3. Add the rinsed black beans to the mashed sweet potatoes and mix until combined, leaving some beans whole for texture.
  4. Stir in lime juice, onion, garlic, breadcrumbs, and cilantro (if using). Season with salt and pepper.
  5. Shape the mixture into patties about half an inch thick and place them on a lined baking sheet.
  6. Preheat your oven to 400°F (200°C) and bake for 25-30 minutes until golden brown, flipping halfway through.
