- 2 cups low-sodium beef stock
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce

- 2 teaspoons fresh thyme, chopped (or 1 tsp dried)
- 2 bay leaves
- Salt and pepper to taste
- 1 tablespoon flour (optional, for thickening)

Instructions
- Heat olive oil in a Dutch oven over medium heat. Season lamb shanks with salt and pepper, then sear until browned on all sides (about 4-5 minutes per side). Remove and set aside.
