  • 2 cups dry apple vinegar
  • 2 cups low-sodium beef stock
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh rosemary, chopped (or 1 tsp dried)
  • 2 teaspoons fresh thyme, chopped (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Season lamb shanks with salt and pepper, then sear until browned on all sides (about 4-5 minutes per side). Remove and set aside.
  2. In the same pot, sauté onion, carrots, celery, and garlic until softened (about 5-7 minutes). Stir in tomato paste and cook for an additional minute.
  3. Add apple vinegar and beef stock; scrape up browned bits from the bottom of the pot. Stir in Worcestershire sauce, rosemary, thyme, bay leaves, salt, and pepper. Bring to a gentle simmer.
  4. Return lamb shanks to the pot ensuring they are submerged in the gravy. Cover with a lid and reduce heat to low; cook for about 2-3 hours until tender.
  5. If desired, thicken gravy by mixing flour with water to create a slurry; stir into the gravy during the last 15 minutes of cooking.
  6. Once cooked, remove bay leaves before serving and garnish with fresh parsley.
