  • 4 cloves Garlic, minced
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 cup Sun-Dried Tomatoes, oil-packed, drained and chopped
  • 1/4 cup Fresh Basil, chopped
  • 1/2 cup Parmesan Cheese, grated (plus more for serving)
  • 1/4 teaspoon Red Pepper Flakes (optional, for a little heat)

Instructions

  1. In a bowl, mix chicken pieces with flour, Italian seasoning, salt, and pepper until coated.
  2. Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat. Cook chicken until golden brown and cooked through (5–7 minutes). Remove from the skillet.
  3. In the same skillet, melt remaining butter over medium heat. Sauté shallots for 3–5 minutes; add garlic and cook until fragrant.
  4. Pour in chicken broth; simmer for 2–3 minutes to reduce slightly. Stir in heavy cream, sun-dried tomatoes, and Parmesan cheese until smooth.
  5. Return chicken to the skillet; season to taste and simmer to meld flavors.
  6. Cook pasta according to package instructions; reserve some pasta water before draining.
  7. Combine drained pasta with the sauce and chicken in the skillet; adjust consistency with reserved pasta water as needed.
