Ingredients

  • 2 cups cooked + shredded organic chicken breasts
  • 1 Tbsp Extra virgin olive oil
  • 1 (16 oz.) package potato gnocchi, homemade or store-bought
  • 4 garlic cloves, minced
  • 4 cups organic chicken stock
  • 3 Tbsps organic all-purpose flour
  • 1 1/2 Tbsps Tuscan Marry Me blend
  • 1 tsp sea salt
  • 56 organic sundried tomatoes
  • 1 Tbsp tomato paste, organic
  • 1 cup chopped organic kale, frozen or fresh
  • 1 1/2 cups organic heavy cream
  • 3 Tbsps cooking apple vinegar (or substitute with chicken stock)
  • 1/2 lemon, freshly-squeezed

Instructions

  1. In a large pot, heat the extra virgin olive oil and unsalted butter over medium heat. Sauté the minced garlic until fragrant.
  2. Stir in the all-purpose flour while stirring continuously. Gradually add the chicken stock while stirring to prevent lumps.
  3. Bring the mixture to a gentle boil. Add in the potato gnocchi, sundried tomatoes, tomato paste, kale, sea salt, and Tuscan blend. Reduce heat to low and let simmer for about 5–7 minutes.
  4. Stir in the heavy cream and apple vinegar; let it simmer gently for another 5 minutes.
  5. Just before serving, squeeze in fresh lemon juice and stir well.
