  • 4 salmon fillets (6 oz each)
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup sliced olives (optional)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine feta cheese, sun-dried tomatoes, olives (if using), olive oil, minced garlic, oregano, salt, and pepper. Mix well.
  3. Place the salmon fillets skin-side down in a baking dish. Season with salt and pepper.
  4. Spoon the topping mixture evenly over the salmon fillets.
  5. Cover the dish with aluminum foil to keep moisture in and bake for 15 minutes.
  6. Remove the foil and continue baking for another 10 minutes or until the salmon flakes easily with a fork.
  7. Garnish with freshly chopped parsley before serving.
