Ingredients
- 2 pounds boneless skinless chicken breasts (cut into 1-inch cubes)
- 1 large onion (chopped)
- 2 large bell peppers (seeded and cubed)
- 2 portobello mushrooms (cubed)
- 28 ounces whole tomatoes (coarsely chopped)
- 1 cup Kalamata olives (pitted)
- 2 tablespoons extra virgin olive oil
- Fresh parsley for garnish
- 1/2 cup olives brine
- 1 teaspoon sugar
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 garlic cloves (grated)
- 2 pounds baby potatoes
Instructions
- Heat a large deep skillet on low-medium heat and add olive oil.
- Sauté chopped onion and cubed bell peppers for about 3-4 minutes until softened.
- Add cubed portobello mushrooms and sauté for another 3-4 minutes until tender.
- Stir in chicken cubes and cook for about 3-4 minutes until opaque.
- Add coarsely chopped tomatoes, olives, sugar, red pepper flakes, salt, and black pepper. Bring to a boil then reduce heat to low and simmer uncovered for 20 minutes.
- For baby potatoes: In a separate pot, boil potatoes in salted water until tender (about 15-20 minutes). Drain and set aside.
- After the skillet has simmered, add grated garlic, stir well, let sit covered for 5 minutes before serving over cooked baby potatoes.
