  • 2 pounds boneless skinless chicken breasts (cut into 1-inch cubes)
  • 1 large onion (chopped)
  • 2 large bell peppers (seeded and cubed)
  • 2 portobello mushrooms (cubed)
  • 28 ounces whole tomatoes (coarsely chopped)
  • 1 cup Kalamata olives (pitted)
  • 2 tablespoons extra virgin olive oil
  • Fresh parsley for garnish
  • 1/2 cup olives brine
  • 1 teaspoon sugar
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 garlic cloves (grated)
  • 2 pounds baby potatoes

Instructions

  1. Heat a large deep skillet on low-medium heat and add olive oil.
  2. Sauté chopped onion and cubed bell peppers for about 3-4 minutes until softened.
  3. Add cubed portobello mushrooms and sauté for another 3-4 minutes until tender.
  4. Stir in chicken cubes and cook for about 3-4 minutes until opaque.
  5. Add coarsely chopped tomatoes, olives, sugar, red pepper flakes, salt, and black pepper. Bring to a boil then reduce heat to low and simmer uncovered for 20 minutes.
  6. For baby potatoes: In a separate pot, boil potatoes in salted water until tender (about 15-20 minutes). Drain and set aside.
  7. After the skillet has simmered, add grated garlic, stir well, let sit covered for 5 minutes before serving over cooked baby potatoes.
