- 2 boneless chicken breasts
- 1 tbsp olive oil
- Juice of lemon
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt & pepper to taste
- 1 cup cooked basmati rice
- Cucumber, sliced and grated
- 1 cup canned chickpeas, rinsed & drained
- 1 cup Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 tsp lemon juice
- Fresh dill for garnish
Instructions
- Marinate the chicken: Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken breasts and coat well. Let marinate for at least 15 minutes.
- Cook the chicken: Preheat a grill or skillet over medium heat. Grill or pan-sear chicken for about 5-6 minutes on each side until fully cooked (internal temperature should reach 165°F/75°C). Allow resting before slicing.
- Make tzatziki: Mix Greek yogurt, grated cucumber (squeezed), minced garlic, chopped dill, lemon juice, salt, and pepper in a bowl until combined.
- Assemble the bowl: Layer cooked rice at the bottom of each bowl. Top with chickpeas, sliced cucumber, sliced grilled chicken, and tzatziki sauce. Garnish with fresh dill.
