- 1 onion (diced)
- 4 garlic cloves (minced)
- 2 cups rice (basmati or other long, medium, or short-grain rice)
- 1 cup water
- 2 cups broth (chicken or vegetable)
- 1 teaspoon turmeric
- Salt to taste
- 3 tablespoons parsley (chopped)
- Zest of 1 lemon
- 3–4 tablespoons lemon juice
Instructions
- In a large saucepan, heat olive oil on medium heat. Add diced onion and sauté for 2 minutes. Stir in minced garlic and cook for another 2 minutes until fragrant.
- Add turmeric and salt, stirring to combine.
- Mix in the rice until it turns mostly translucent.
- Pour in the broth and water, cover with a lid, and bring to a simmer. Reduce heat to low.
- Cook for about 12 minutes until all liquid evaporates.
- Remove from heat and let it rest covered for 10 minutes.
- Finally, stir in lemon zest, lemon juice, and chopped parsley before serving.
