  • 8 small boneless chicken thighs
  • 2 cloves garlic
  • 1 jalapeño pepper
  • 3 tablespoons tomato paste
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1/2 teaspoon oregano
  • Fresh coriander
  • Juice of half a lime
  • Salt and black pepper
  • 1 red bell pepper, chopped into square pieces
  • 1 green bell pepper, chopped into square pieces
  • 1 yellow bell pepper, chopped into square pieces
  • 1 white onion, chopped into square pieces
  • Cooking oil spray

Instructions

  1. In a mini food processor, blend garlic, jalapeño, tomato paste, cumin, paprika, oregano, lime juice, salt, and pepper until smooth. Add water if needed.
  2. Dice chicken thighs into bite-sized pieces and combine with the marinade in a mixing bowl. Cover and refrigerate for at least 2 hours or overnight.
  3. Pre-soak wooden skewers in warm water for 30 minutes (if using). Thread marinated chicken along with bell peppers and onion onto each skewer.
  4. Preheat the grill to high heat. Spray skewers lightly with cooking oil spray and grill for about 15 minutes, turning frequently until the chicken is cooked through (internal temperature should reach 75°C/165°F).
