- 1 ½ pounds tomatillos, husked and rinsed
- 4–5 fresh tomatillos or 1 (28-ounce) can tomatillos, drained
- 4 poblano peppers, roasted, peeled, and seeded
- 2 jalapeños, roasted or fresh
- 1 medium onion, chopped
- 4 garlic cloves, peeled
- ½ cup fresh cilantro leaves
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 cup chicken or beef broth
- Salt and pepper, to taste
- 2 ½ pounds beef chuck roast or stew meat, cut into 1 ½-inch cubes
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon ground cumin
- 2 cups beef broth
Instructions
- Preheat your broiler to high. Roast the tomatillos, poblano peppers, jalapeños, onion, and garlic on a baking sheet for about 8–10 minutes until charred.
- In a blender, combine the roasted vegetables with cilantro, cumin, oregano, and broth; blend until smooth. Season with salt and pepper.
- Season the beef cubes with salt, pepper, and cumin. Heat vegetable oil in a Dutch oven over medium-high heat and brown the beef on all sides.
- Add the blended sauce to the pot, scraping up any browned bits. Return the beef to the pot along with more broth. Bring to a boil then reduce heat to low. Cover and simmer for about 1 ½–2 hours until the beef is fork-tender.
- Adjust seasoning as needed before serving hot with rice or tortillas.
