  • 1 tablespoon olive oil
  • 1 red bell pepper (diced)
  • 1 bunch fresh cilantro (minced)
  • 1 jalapeno (diced)
  • 1/2 large red onion (diced)
  • 2/3 cup cotija cheese (shredded)
  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 4 tablespoons fresh lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili powder

Instructions

  1. 1. Heat olive oil in a sauté pan over medium-high heat. Add corn and cook until slightly charred (7-10 minutes). Transfer to a large bowl.
  2. 2. Combine corn with diced red bell pepper, jalapeno, minced cilantro, and diced red onion in the bowl; mix well.
  3. 3. In a small bowl, whisk together sour cream, mayonnaise, lime juice, cumin, paprika, kosher salt, and chili powder until smooth.
  4. 4. Pour the dressing over the corn mixture and stir until evenly coated. Gently fold in half of the cotija cheese.
  5. 5. Garnish with remaining cotija cheese and cilantro leaves before serving.
