- ¼ tsp baking soda
- 2 tbsp sugar
- ½ tsp salt
- 1 tbsp butter
- ½ cup hot water (or as needed)
- Refined oil (for deep frying)
- ½ cup caster sugar (for coating)
- 2 tsp ground cinnamon (for coating)
Instructions
- Prepare the cinnamon sugar mixture by combining caster sugar and ground cinnamon in a bowl. Set aside.
- In a mixing bowl, combine glutinous rice flour, all-purpose flour, baking soda, salt, sugar, and butter. Gradually add hot water until moistened. Knead until smooth and let rest for 5 minutes.
- Heat oil in a deep fryer or pot over medium-low heat. Shape the dough into small balls and carefully drop them into the oil. Fry until golden brown (about 3 to 5 minutes).
- Remove with a slotted spoon and drain on paper towels. While warm, roll each doughnut in the cinnamon sugar mixture before serving.
