  • 1 cup finely shredded zucchini
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for swirl)
  • 1 Tablespoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix together shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until combined.
  3. In another bowl, whisk together flour, granulated sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the wet mixture; stir gently until just combined.
  5. Prepare the cinnamon swirl by mixing granulated sugar with cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan; sprinkle half of the cinnamon mixture on top. Pour in remaining batter and top with remaining cinnamon swirl mix. Use a knife to create swirls through the batter.
  7. Bake for 60–65 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool for 10–15 minutes before slicing and enjoying.
