- ⅔ cup sour cream
- ¾ cup milk (preferably whole or 2%, at room temperature)
- 3 cups fresh strawberries (sliced or diced, divided)
- 2 tablespoons strawberry jam
- 8 ounces cream cheese (softened to cool room temperature)
- 1 cup powdered sugar
- ¾ teaspoon vanilla extract
- 2¼ cups heavy whipping cream (very cold, straight from the fridge)
Instructions
- Start by bringing all your ingredients to room temperature. This helps in achieving a light and fluffy cake.
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a mixing bowl, whisk together all-purpose flour, baking powder, and salt. Set aside.
- In another bowl, mix granulated sugar and vegetable oil until combined. Add eggs and egg whites one at a time, mixing well after each addition. Stir in both vanilla extracts and sour cream until smooth.
- Gradually add the dry ingredients to the wet mixture while alternating with milk. Mix until just combined—do not overmix!
- Gently fold in 2 cups of sliced strawberries into the batter.
- Divide the batter evenly between the prepared pans. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for about 10 minutes before transferring them onto cooling racks.

- Place the second layer on top and frost the top and sides of the cake with remaining whipped cream frosting.
