  • 1/2 cup warm whole milk
  • 2 lb confectioners sugar (sifted)
  • 1 lb unsalted butter (room temperature)
  • 1 tsp vanilla extract for frosting
  • 1 tbsp heavy cream
  • 1 pinch kosher salt for frosting
  • 1 tsp whole milk for frosting

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake tin with liners.
  2. In one bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine melted butter and egg whites; then mix in vanilla extract, sour cream, and warm milk until smooth.
  4. Gradually fold the wet ingredients into the dry ingredients until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Let cool before frosting with your favorite icing.
