Description

Niçoise Salad is a delightful, colorful dish that perfectly embodies the essence of summer dining.   • 4 cups mixed salad greens
  • 6 ounces green beans (haricot verts)
  • 4 large eggs
  • 2 cups baby red or white potatoes
  • 1 (5-ounce) can tuna (drained)
  • 1 cup pitted olives
  • 1 cup grape tomatoes (halved)
  • ½ English cucumber (thinly sliced)
  • ½ small red onion (thinly sliced)
  • ⅓ cup extra virgin olive oil
  • ¼ cup lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey
  • 1 garlic clove (minced)
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper to create the vinaigrette. Set aside.
  2. Boil water in a small pot. Add eggs gently and turn off the heat. Let them cook for 6½ to 7 minutes for soft yolks before transferring them to an ice water bath.
  3. In another pot of boiling salted water, cook baby potatoes until tender (about 15 minutes). Remove and let cool before slicing in half.
  4. Blanch green beans in the same pot for 1 to 2 minutes until bright green, then shock them in ice water.
  5. On a large platter, layer mixed greens as a base and arrange potatoes, green beans, tuna, olives, halved grape tomatoes, sliced cucumber, red onion, and halved eggs on top. Season with salt and pepper. Drizzle with half of the vinaigrette.
