 - 1 cup cold heavy cream
 - 24 oz (3 blocks) softened cream cheese
 - 1 cup powdered sugar
 - 1 cup creamy Biscoff cookie butter
 - 1/3 cup room temperature sour cream
 - 2 tsp pure vanilla extract
 - Pinch of salt
 
Instructions
- Prepare the crust by blending Biscoff cookies in a food processor until finely crushed, then mix with melted butter. Press the mixture into mini cheesecake pans and chill.
 - Whip cold heavy cream until stiff peaks form, then refrigerate.
 - In another bowl, beat together cream cheese, powdered sugar, Biscoff cookie butter, sour cream, vanilla extract, and salt until smooth. Gently fold in whipped cream.
 - Pipe the filling onto the chilled crusts and refrigerate for at least 6 hours, or overnight.
