  • Cooking spray
  • 5 tbsp unsalted butter
  • 1 (10 oz) bag mini vegan marshmallows
  • Pinch of kosher salt
  • 6 cups Rice Krispies cereal
  • 12 Oreos, crushed (divided)
  • 24 whole Oreos (for topping)
  • 1 tsp coconut oil (divided)
  • 1/3 cup semisweet chocolate chips
  • 1/3 cup white chocolate chips

Instructions

  1. Line a 9"x13" pan with parchment paper and grease it with cooking spray.
  2. In small microwave-safe bowls, melt the coconut oil with the white chocolate and semisweet chocolate in short intervals until smooth; set aside.
  3. In a large pot over medium-low heat, melt the butter. Stir in the mini vegan marshmallows and salt until fully melted.
  4. Remove from heat; add the Rice Krispies and half of the crushed Oreos. Mix until combined.
  5. Press half of the mixture into the prepared pan, layer with whole Oreos, then top with remaining mixture and sprinkle with crushed Oreos.
  6. Drizzle melted chocolates over the top and let set for about 15 minutes before cutting into squares.
