  • 1 tbsp olive oil
  • 1 red onion
  • 3 large cloves garlic
  • 1 carrot (diced)
  • 1 leek (diced)
  • 1 tsp dried thyme
  • 120 g orzo pasta
  • 1.5 l vegetable stock
  • Fresh dill (for garnish)
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • Extra virgin olive oil (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, diced carrot, and leek; season with salt and pepper. Sauté for about 6 minutes until softened.
  2. Dissolve the stock cube in boiling water to prepare vegetable stock.
  3. Add orzo pasta and vegetable stock to the pot along with dried thyme. Simmer for about 12 minutes until orzo is tender.
  4. Taste and adjust seasoning with more salt, pepper, and lemon juice. Stir in fresh dill.
  5. Serve hot, drizzled with extra virgin olive oil and garnished with dill.
