Ingredients
- 1 tbsp olive oil
- 1 red onion
- 3 large cloves garlic
- 1 carrot (diced)
- 1 leek (diced)
- 1 tsp dried thyme
- 120 g orzo pasta
- 1.5 l vegetable stock
- Fresh dill (for garnish)
- Salt and pepper to taste
- Juice of 1/2 lemon
- Extra virgin olive oil (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, diced carrot, and leek; season with salt and pepper. Sauté for about 6 minutes until softened.
- Dissolve the stock cube in boiling water to prepare vegetable stock.
- Add orzo pasta and vegetable stock to the pot along with dried thyme. Simmer for about 12 minutes until orzo is tender.
- Taste and adjust seasoning with more salt, pepper, and lemon juice. Stir in fresh dill.
- Serve hot, drizzled with extra virgin olive oil and garnished with dill.
