  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 120 ml whole milk
  • For the Glaze: 120 g powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 175°C. Grease and line a 23 cm round cake pan with parchment paper.
  2. In a large mixing bowl, beat butter and sugar until pale and fluffy.
  3. Add eggs one at a time, mixing thoroughly after each addition.
  4. Gently stir in lemon zest and juice until blended.
  5. Add flour, baking powder, and salt; mix gently until just combined.
  6. Gradually incorporate milk until the batter is smooth.
  7. Pour batter into the prepared pan and bake for 30–35 minutes or until a skewer comes out clean.
  8. While baking, whisk together powdered sugar and lemon juice for the glaze.
  9. Cool the cake in the pan for about 10 minutes before transferring to a wire rack; drizzle with glaze.
