  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 1 cup heavy cream (plus 1 tablespoon for brushing)
  • ½ teaspoon pure vanilla extract
  • 1 cup diced fresh peeled peaches
  • 1 cup confectioners’ sugar
  • 1 tablespoon honey
  • ½ teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine heavy cream and vanilla extract; pour over dry ingredients and mix gently. Fold in diced peaches.
  5. Transfer dough to a floured surface and shape into a circle about 1 inch thick; cut into triangles.
  6. Place on prepared sheet and freeze for 15–20 minutes while preheating oven to 400°F (204°C).
  7. Brush with heavy cream before baking for about 18–23 minutes until golden brown.
  8. While cooling, whisk together glaze ingredients until smooth; drizzle over scones.
