  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup sour cream, room temperature
  • 1½ cups fresh peaches, peeled & sliced
  • ½ cup all-purpose flour
  • ½ cup granulated sugar (for topping)
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 6 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until moistened. Press into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined. Pour over the crust.
  4. In another bowl, combine sliced peaches with flour, sugar, cinnamon, and nutmeg. Toss to coat and sprinkle over the cheesecake layer. Dot with small pieces of cold butter.
  5. Bake for 45-50 minutes until set and golden brown on top. Allow cooling completely before cutting into bars.
