  • 1 1/2 cups granulated sugar
  • 1 1/2 cups + 2 Tbsp all-purpose flour (sifted twice for best results)
  • 1/3 cup juice from canned peaches
  • 3 3/4 cups heavy cream (at least 33% fat content)
  • 3/4 cups powdered sugar
  • 1 Tbsp vanilla extract
  • 1 can (15 oz halved peaches)
  • 2 cups sliced almond slices (oven roasted @350F for 57 min.)
  • 3/4 cups sliced almonds if you want to layer them inside the cake
  • 1 cup + 2 Tbsp peach jam/preserve

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two greased and parchment-lined baking pans.
  2. Beat together eggs, sugar, and peach juice until fluffy. Gradually mix in sifted flour, then add vanilla extract.
  3. Pour batter evenly into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool completely.
  4. Prepare whipped cream by beating heavy cream, powdered sugar, and vanilla until stiff peaks form.
  5. Assemble by layering sponge cake with peach jam, chopped peaches, whipped cream, and sliced almonds. Repeat with remaining layer.
  6. Decorate the entire cake with whipped cream and additional peach slices before serving.
