  • 2 Tbsp half and half
  • 1/4 tsp peppermint extract
  • 1 1/2 cups powdered sugar
  • 1/4 cup finely crushed peppermint bits or candy canes

Instructions

  1. Whisk together flour, cornstarch, and salt in a mixing bowl; set aside.
  2. In an electric stand mixer, cream softened butter with powdered sugar until smooth.
  3. Mix in peppermint extract; gradually add the flour mixture until just combined.
  4. Chill the dough for 1 hour; preheat oven to 350°F during the last 15 minutes of chilling.
  5. Scoop tablespoon-sized balls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-13 minutes until set and lightly golden on the bottoms; cool on wire racks.
  7. For frosting, cream together salted butter, half-and-half, peppermint extract, and powdered sugar until fluffy. Frost cooled cookies and sprinkle with crushed peppermint bits.
