  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies for coating

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream the softened butter and sugar with an electric mixer until fluffy. Beat in the egg, vanilla, and peppermint extracts until combined.
  3. Gradually mix in dry ingredients on low speed until a soft dough forms.
  4. Divide the dough in half; keep one half plain and color the other with red gel food coloring.
  5. Chill both dough halves wrapped in plastic wrap for at least 30 minutes.
  6. Roll out each dough into rectangles about 10×12 inches.
  7. Layer the red dough on top of the plain dough and roll tightly into a log shape.
  8. Chill again for at least 2 hours before slicing into rounds.
  9. Preheat oven to 375°F (190°C). Coat slices in coarse sugar or crushed candies before placing on lined baking sheets.
  10. Bake for 8-10 minutes or until edges are lightly golden.
