- 1 teaspoon peppermint extract
- Red gel food coloring
- 1/4 cup coarse sugar or crushed peppermint candies for coating
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream the softened butter and sugar with an electric mixer until fluffy. Beat in the egg, vanilla, and peppermint extracts until combined.
- Gradually mix in dry ingredients on low speed until a soft dough forms.
- Divide the dough in half; keep one half plain and color the other with red gel food coloring.
- Chill both dough halves wrapped in plastic wrap for at least 30 minutes.
- Roll out each dough into rectangles about 10×12 inches.
- Layer the red dough on top of the plain dough and roll tightly into a log shape.
- Chill again for at least 2 hours before slicing into rounds.
- Preheat oven to 375°F (190°C). Coat slices in coarse sugar or crushed candies before placing on lined baking sheets.
