Ingredients
- 4 large sweet onions
- 1 pound ground chicken (or turkey)
- 1 cup rinsed rice
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 tablespoons tomato paste
- Salt and black pepper to taste
- 2 cups vegetable broth
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Peel the onions and carefully hollow them out, setting aside the inner layers.
- Cook the rice in boiling water until slightly tender, then drain and cool.
- In a mixing bowl, combine ground chicken, cooked rice, parsley, mint, tomato paste, salt, and pepper.
