  • 2 tablespoons powdered sugar
  • 1 (8 oz) block cream cheese (softened)
  • 2 tablespoons coconut vanilla extract (alcohol-free) (optional)
  • 1/2 cup crushed pineapple (very well drained)
  • 1 cup shredded coconut
  • 36 stemless maraschino cherries
  • 2 (10 oz) packages Ghirardelli White Melting Wafers
  • toasted unsweetened shredded coconut (for topping)

Instructions

  1. Line a baking sheet with wax or parchment paper.
  2. In a food processor, combine Golden Oreos and powdered sugar; pulse until fine crumbs form.
  3. Add softened cream cheese and optional coconut vanilla extract; pulse until smooth.
  4. Gently fold in well-drained crushed pineapple and shredded coconut.
  5. Chill the mixture in the freezer for 20 minutes to firm up.
  6. Scoop about 1 tablespoon of the mixture, place a maraschino cherry in the center, and roll into balls.
  7. Freeze the truffle balls for another 20 minutes while melting white chocolate according to package instructions.
  8. Dip each truffle in melted chocolate and sprinkle with toasted coconut before allowing them to set.
