  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)
  • Sesame Seeds (for garnish)
  • Crushed Red Pepper (for garnish)

Instructions

  1. Prepare the ingredients by dicing the bell pepper and chopping green onions.
  2. Heat oil in a skillet over medium-high heat; add chicken and cook until golden brown (6–8 minutes).
  3. Stir in minced garlic until fragrant (about 30 seconds).
  4. Mix soy sauce, pineapple juice, honey or brown sugar, rice vinegar, and cornstarch in a bowl.
  5. Pour the sauce over the chicken; add pineapple chunks and bell pepper. Stir to coat.
  6. Simmer for about 5–7 minutes until heated through and serve over cooked rice with garnishes.
