  • Chicken (1 1/2 pounds, boneless and skinless)
  • Vegetable Oil (1 tablespoon)
  • Red Bell Pepper (1)
  • Onion (1)
  • Garlic (2 cloves)
  • Ginger (1 teaspoon)
  • Canned Pineapple Chunks (1 1/2 cups)
  • Green Onions (1/2 cup, sliced)

Instructions

  1. In a bowl, mix pineapple juice, chicken broth, honey, hoisin sauce, soy sauce, rice vinegar, and cornstarch until smooth; set aside.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat. Season chicken with salt and pepper; stir-fry until browned and cooked through (5–7 minutes).
  3. Add diced red bell pepper and onion along with garlic and ginger; stir-fry for 3–4 minutes until slightly tender.
  4. Pour the sauce over the chicken and vegetables; cook until thickened.
  5. Gently fold in canned pineapple chunks until heated through. Serve hot garnished with sliced green onions.
