- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp lime juice
- 1 cup fresh pineapple (cubed)
- 8 small tortillas (flour or corn)
- Optional: sliced jalapeño
- Optional: sliced avocado
- ¼ cup diced red onion
- ¼ cup chopped cilantro
Instructions
- Marinate the Chicken: In a mixing bowl, combine chili powder, cumin, paprika, and lime juice. Add the chicken thighs and coat well. Let it marinate for at least 15 minutes.
- Cook the Chicken: Preheat a skillet over medium-high heat. Cook marinated chicken for about 6–7 minutes on each side until golden brown and fully cooked. Remove from heat and let rest before slicing.
- Prepare Your Toppings: While the chicken rests, dice red onion, chop cilantro, cube pineapple, and slice jalapeño and avocado if desired.
- Assemble Your Tacos: Warm tortillas in a dry skillet for about 30 seconds per side. Fill each tortilla with sliced chicken and top with pineapple cubes, onions, cilantro, jalapeño, and avocado as preferred.
