  • 1 tsp paprika
  • 1 tbsp lime juice
  • 1 cup fresh pineapple (cubed)
  • 8 small tortillas (flour or corn)
  • Optional: sliced jalapeño
  • Optional: sliced avocado
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine chili powder, cumin, paprika, and lime juice. Add the chicken thighs and coat well. Let it marinate for at least 15 minutes.
  2. Cook the Chicken: Preheat a skillet over medium-high heat. Cook marinated chicken for about 6–7 minutes on each side until golden brown and fully cooked. Remove from heat and let rest before slicing.
  3. Prepare Your Toppings: While the chicken rests, dice red onion, chop cilantro, cube pineapple, and slice jalapeño and avocado if desired.
  4. Assemble Your Tacos: Warm tortillas in a dry skillet for about 30 seconds per side. Fill each tortilla with sliced chicken and top with pineapple cubes, onions, cilantro, jalapeño, and avocado as preferred.
