Ingredients

  • 200g fresh raspberries
  • 50g sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch, dissolved in 1 tbsp water
  • 250g cream cheese, softened
  • 100g powdered sugar
  • 100g pistachio paste
  • 1 tsp vanilla extract
  • 200ml heavy cream, cold
  • 2 eggs
  • 50g sugar
  • 50g sifted flour
  • ½ tsp baking powder
  • 200g white chocolate
  • 100ml heavy cream
  • 2 tbsp pistachio paste
  • Green food coloring (optional)
  • Crushed pistachios
  • Fresh raspberries

Instructions

  1. Make the raspberry center: Cook raspberries with sugar and lemon juice until soft, thicken with cornstarch slurry, pour into molds, and freeze.
  2. Prepare the cheesecake filling: Beat cream cheese, powdered sugar, pistachio paste, and vanilla until smooth. Whip cold heavy cream and fold into the mixture.
  3. Assemble the domes: Fill mold bottoms with cheesecake filling, insert frozen raspberry centers, cover with more filling, smooth tops, and freeze until firm.
  4. Bake sponge base: Beat eggs and sugar until fluffy, fold in flour and baking powder, spread on a baking tray, bake for 8–10 minutes, cool, then cut rounds for bases.
  5. Create mirror glaze: Heat heavy cream, pour over chopped white chocolate to melt and mix in pistachio paste; let cool slightly before glazing.
  6. Glaze the domes: Unmold frozen domes onto a wire rack and pour glaze over them evenly. Garnish with crushed pistachios and fresh raspberries before serving.
