- 227g Salted Butter (room temperature)
- 100g Granulated Sugar
- 250g All-purpose Flour
- 120g Pistachios (without shells)
- 113g Dark Chocolate

- Gradually add flour and mix until the dough resembles chunky breadcrumbs; then bring it together into a smooth ball.
- Fold in two-thirds of the chopped pistachios until evenly distributed.
- Shape the dough into a log, wrap in plastic wrap, and chill for one hour.
- Preheat oven to 340°F (170°C). Slice the chilled dough into 1/2-inch rounds and place them on a lined cookie sheet.
- Bake for 12-18 minutes until golden at the edges. Cool slightly before dipping in melted dark chocolate and topping with remaining pistachios.
