- 4 large ripe plantains
- 1 lb ground beef
- 2 tsp adobo seasoning
- 1 tbsp sazon
- 1 onion (minced)
- 3 garlic cloves (minced)
- 1 green bell pepper (minced)
- ¼ cup fresh cilantro (chopped)
- ⅓ cup olives or capers
- 1 cup tomato sauce
- 2 cups dairy-free cheese
- 3 large eggs (beaten)

Instructions
- Preheat your oven to 356°F (180°C).
- Grease a casserole dish and set aside.
- In a bowl, combine ground beef, adobo seasoning, and sazon.
- Sauté onion, garlic, bell pepper, and cilantro in coconut oil until soft.
- Add seasoned beef to the skillet and cook until browned; then stir in tomato sauce and olives/capers.
- Cut plantains into strips and fry in coconut oil until golden brown.
- Layer fried plantains in the casserole dish with beaten eggs, the beef mixture, and dairy-free cheese; repeat layers as desired.
- Bake for about 20 minutes until golden brown on top.
