Ingredients

  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose (or light corn syrup)
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your workstation by greasing baking paper on a tray.
  2. Insert bamboo skewers into each apple and set aside.
  3. In a saucepan, combine sugar, water, corn syrup, and black food coloring. Heat over medium until dissolved.
  4. Stop stirring once dissolved and wash down pot sides with a wet brush.
  5. Cook until the mixture reaches hard crack stage (150ºC/310ºF).
  6. Dip each apple carefully into the caramel until fully coated.
  7. Place coated apples on the prepared baking sheet to cool completely before serving.
