  • 1 tbsp olive oil
  • 400g (6) sausages (chicken or turkey)
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic
  • 1/2 tsp dried thyme
  • 3 tbsp plain flour
  • 1 litre chicken or vegetable stock
  • 2 bay leaves
  • 100g wild rice
  • 3 medium potatoes (peeled and diced)
  • 375ml plant-based cream alternative
  • Salt to taste

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Remove sausage from its casing and add to the pot. Break it apart with a spatula and cook until golden brown. Transfer sausage to a plate, leaving some fat in the pot.
  2. In the same pot, add chopped onion, celery, and carrots. Sauté over low heat for about 10 minutes until softened. Stir in minced garlic and thyme; cook for an additional 30 seconds before adding flour to form a paste.
  3. Gradually add chicken stock while stirring to combine with the roux. Return the sausage to the pot along with bay leaves and wild rice. Bring to a simmer and cook for 30 minutes.
  4. Add diced potatoes; continue cooking for another 15 minutes until both rice and potatoes are tender.
  5. Stir in plant-based cream alternative and season with salt before serving hot.
