  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans, toasted (optional)

Instructions

  1. Preheat your oven to 375°F and grease a 9×9-inch baking dish.
  2. In a large bowl, combine oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, mix together pumpkin puree, milk, eggs, maple syrup or honey, melted butter or coconut oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until fully combined.
  5. Transfer the batter to the prepared baking dish and sprinkle with toasted pecans if desired.
  6. Bake for 30-34 minutes until the center is set; a toothpick should come out clean.
