  • 1 cup brown sugar
  • 1/2 cup coconut cream
  • 1/4 cup butter substitute (like plant-based margarine)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine pumpkin puree, vegetable oil, granulated sugar, brown sugar, and eggs until smooth.
  3. In another bowl, whisk together all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fill each muffin liner two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  6. For the caramel topping, combine brown sugar, coconut cream, and butter substitute in a saucepan over medium heat. Stir until melted and smooth; remove from heat and stir in vanilla extract.
  7. Once the cupcakes are completely cooled, drizzle the caramel topping generously over each cupcake.
