  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Place ramekins or mini pumpkins in a baking dish and fill with hot water halfway up the sides.
  3. In a mixing bowl, whisk egg yolks and granulated sugar until pale. In another bowl, combine cream, pumpkin puree, vanilla extract, spices, and salt.
  4. Gradually add the cream mixture to the egg mixture while whisking continuously until smooth.
  5. Pour custard into ramekins or pumpkins, filling them three-quarters full.
  6. Bake for about 30 minutes until edges are set; center should jiggle slightly.
  7. Cool slightly, then refrigerate for at least 2 hours.
  8. To serve, sprinkle sugar on top and caramelize with a kitchen torch.
