  • 1 large egg
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • 1/2 tablespoon water
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini donut pan.
  2. In a bowl, mix together all-purpose flour, oat flour, pumpkin pie spice, cinnamon, baking powder, and salt.
  3. In another bowl, whisk the egg with brown sugar, oil, vanilla extract, and pumpkin until smooth.
  4. Combine the wet and dry ingredients until just mixed.
  5. Pipe the batter into the donut pan cavities halfway full.
  6. Bake for 6-7 minutes until set and springy.
  7. Cool on a wire rack before glazing.
  8. For the glaze, whisk powdered sugar, maple syrup, corn syrup, water, and cinnamon until smooth. Dip cooled donuts into glaze.
