- 360 g pasta shells
- 1 kg butternut squash pumpkin
- 8 garlic cloves
- 180 g feta cheese
- 2 handfuls baby spinach
- ¼ cup extra virgin olive oil
- Salt and pepper to taste
- Chilli flakes (optional)
- Walnuts (optional)
Instructions
- Preheat the oven to 200°C/400°F.
- Peel and cube the butternut squash into 2cm pieces, placing them in an oven-safe dish with garlic cloves, thyme, olive oil, salt, and pepper.
- Add the block of feta cheese in the center of the dish, seasoning it with thyme and olive oil.
- Roast for about 25 minutes until the pumpkin is tender and feta is softened.
- Meanwhile, cook pasta in salted water until al dente; reserve some pasta water before draining.
- Once roasted, mash roasted garlic into the vegetables, break up feta, and stir everything together.
- Mix in baby spinach and drained pasta along with a splash of reserved pasta water for a creamy texture. Serve topped with walnuts and optional chilli flakes.
