  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • Chilli flakes (optional)
  • Walnuts (optional)

Instructions

  1. Preheat the oven to 200°C/400°F.
  2. Peel and cube the butternut squash into 2cm pieces, placing them in an oven-safe dish with garlic cloves, thyme, olive oil, salt, and pepper.
  3. Add the block of feta cheese in the center of the dish, seasoning it with thyme and olive oil.
  4. Roast for about 25 minutes until the pumpkin is tender and feta is softened.
  5. Meanwhile, cook pasta in salted water until al dente; reserve some pasta water before draining.
  6. Once roasted, mash roasted garlic into the vegetables, break up feta, and stir everything together.
  7. Mix in baby spinach and drained pasta along with a splash of reserved pasta water for a creamy texture. Serve topped with walnuts and optional chilli flakes.
