Ingredients
- 6 slices turkey bacon, chopped

- ½ cup apple cider
- 1½ cups ricotta cheese
- 1⅓ cups pumpkin purée

- 2 handfuls fresh sage leaves
- 2 large eggs + 2 tsp water (for egg wash)
- 2 sheets frozen puff pastry, thawed
Instructions
- In a skillet, cook the chopped turkey bacon until crisp. Set aside on paper towels.
- In the same skillet, caramelize onions with salt and pepper over medium-low heat for about 25–30 minutes. Add apple cider and cook an additional 5 minutes.
- Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface and prepare baking sheets.
- In a mixing bowl, combine ricotta and pumpkin purée; season with salt and pepper. Spread this mixture in the pastry.
- Top with caramelized onions, mozzarella cheese, and turkey bacon. Scatter sage leaves over top and brush edges with egg wash.
