  • 6 slices turkey bacon, chopped
  • 4 sweet onions, thinly sliced
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 2 cups freshly grated mozzarella cheese
  • 2 handfuls fresh sage leaves
  • 2 large eggs + 2 tsp water (for egg wash)
  • 2 sheets frozen puff pastry, thawed

Instructions

  1. In a skillet, cook the chopped turkey bacon until crisp. Set aside on paper towels.
  2. In the same skillet, caramelize onions with salt and pepper over medium-low heat for about 25–30 minutes. Add apple cider and cook an additional 5 minutes.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface and prepare baking sheets.
  4. In a mixing bowl, combine ricotta and pumpkin purée; season with salt and pepper. Spread this mixture in the pastry.
  5. Top with caramelized onions, mozzarella cheese, and turkey bacon. Scatter sage leaves over top and brush edges with egg wash.
  6. Bake for about 25–30 minutes until golden brown.
