 - 3 tablespoons low-sodium soy sauce
 - 1 tablespoon rice vinegar
 - 1 tablespoon maple syrup or honey
 - 2 cloves garlic (minced)
 - 1 teaspoon fresh ginger (grated)
 - Optional: 1/2 teaspoon red pepper flakes or 1 teaspoon sriracha for heat
 - 1/4 cup green onions (sliced)
 - 1/2 cup shredded carrots
 - 1/2 cup thinly sliced bell peppers or cucumbers
 - 1 tablespoon sesame seeds (for garnish)
 
Instructions
- Cook the noodles according to package instructions in a large pot of boiling water until al dente. Drain and rinse under cold water.
 - While the noodles cook, whisk together toasted sesame oil, soy sauce, rice vinegar, maple syrup or honey, minced garlic, grated ginger, and red pepper flakes in a mixing bowl.
 - In a large bowl, combine the drained noodles with the prepared sauce and toss until evenly coated.
