  • 3 tablespoons toasted sesame oil
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or honey
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • Optional: 1/2 teaspoon red pepper flakes or 1 teaspoon sriracha for heat
  • 1/4 cup green onions (sliced)
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced bell peppers or cucumbers
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Cook the noodles according to package instructions in a large pot of boiling water until al dente. Drain and rinse under cold water.
  2. While the noodles cook, whisk together toasted sesame oil, soy sauce, rice vinegar, maple syrup or honey, minced garlic, grated ginger, and red pepper flakes in a mixing bowl.
  3. In a large bowl, combine the drained noodles with the prepared sauce and toss until evenly coated.
  4. Fold in sliced green onions, shredded carrots, and bell peppers or cucumbers. Garnish with sesame seeds before serving.
