Ingredients

  • 2 eggs
  • 1 cup baby spinach
  • 1 garlic clove, sliced
  • 1/2 tsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup cherry tomatoes, halved
  • 1 kiwi, peeled and sliced
  • 45 strawberries, halved
  • Chili flakes, to taste

Instructions

  1. In a small pan, heat olive oil over medium heat. Add sliced garlic and cook for about 30 seconds until fragrant. Add baby spinach and sauté until wilted, seasoning with salt.
  2. In a non-stick frying pan, fry the eggs sunny-side-up over medium-low heat until the whites are set and yolks are runny. Season with salt and pepper.
  3. While the eggs cook, slice the kiwi and strawberries on a cutting board. Toss halved cherry tomatoes with a pinch of salt and chili flakes.
  4. Arrange the sautéed spinach, sunny-side-up eggs, sliced kiwi, strawberries, and seasoned cherry tomatoes on a plate. Serve immediately.
