  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Chop all vegetables: onion, garlic, bell peppers, eggplant, zucchini, and yellow squash.
  2. Heat olive oil in a large pot over medium heat. Sauté onion until softened (5-7 minutes), then add garlic and cook until fragrant (1 minute).
  3. Stir in bell peppers; cook until softened (5 minutes). Add eggplant, zucchini, and yellow squash; continue cooking until tender (8-10 minutes).
  4. Pour in crushed tomatoes, tomato sauce, and vegetable broth. Stir well and season with dried herbs, salt, and pepper.
  5. Bring to a simmer; cover partially and let cook for at least 30 minutes to meld flavors.
  6. For a smoother texture, blend the soup using an immersion blender or regular blender.
  7. Adjust seasoning as needed before serving hot with fresh basil garnish.
