- 2 bay leaves
- ½ cup chopped fresh parsley (plus more for garnish)

- 1½ cups long grain brown rice or white rice (cooked according to the directions on the package)
Instructions
- Soak the dry beans in water for at least 8 hours or overnight.
- In a Dutch oven, heat olive oil over medium heat and brown the turkey sausage; set aside.
- Sauté diced onions, celery, bell peppers, and garlic until softened.
- Stir in seasonings and pour in vegetable broth, scraping up any browned bits.
- Add drained beans and browned sausage; bring to a boil then reduce heat to simmer for 1½ to 2 hours until beans are soft.
- Mash some beans for creaminess, adjust consistency if needed, then stir in parsley and green onions.
