  • 2 tbsp unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Sift together powdered sugar, almond flour, and cocoa powder in a bowl.
  3. In another bowl, beat egg whites until foamy. Gradually add granulated sugar until stiff peaks form.
  4. Fold in vanilla extract and red gel food coloring into the egg whites.
  5. Gently incorporate the dry mixture until the batter flows like lava.
  6. Pipe small rounds onto parchment-lined baking sheets and let rest for 30–45 minutes.
  7. Bake for 15–17 minutes until shells are set; cool completely on sheets.
  8. For the filling, beat cream cheese and butter until smooth; add powdered sugar and vanilla extract.
  9. Assemble macarons by piping filling onto half of the shells and sandwiching with remaining shells.
