Instructions
- In a large bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper.
- Add chicken pieces to the marinade, toss to coat evenly, and let sit for at least 15 minutes.
- While marinating, prepare the salsa by mixing diced red onion, cilantro, jalapeño (optional), lime juice, and salt in a small bowl; set aside.
- Heat a skillet over medium-high heat and cook marinated chicken for 5–7 minutes until golden brown and cooked through (internal temperature should reach 165°F).
- Warm tortillas in a dry skillet or microwave wrapped in a damp towel.
