- 1 cup shredded Swiss cheese
- 3/4 cup sauerkraut, drained and squeezed dry
- 4 ounces cream cheese, softened
- 1/2 cup rye breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Oil for frying (vegetable or canola)
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon pickle relish
- 1 teaspoon hot sauce
- 1/4 teaspoon garlic powder
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- In a large mixing bowl, combine finely chopped corned beef, shredded Swiss cheese, drained sauerkraut, and softened cream cheese. Mix until well blended and refrigerate for 20–30 minutes.
- Scoop tablespoon-sized portions of the mixture and roll into balls.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of rye breadcrumbs and panko.
- Coat each ball first in flour, then dip in egg before rolling in the breadcrumb mixture.
- Heat oil in a frying pan to 350°F (175°C) and fry balls in batches for 3–4 minutes until golden brown.
