  • 1 cup shredded Swiss cheese
  • 3/4 cup sauerkraut, drained and squeezed dry
  • 4 ounces cream cheese, softened
  • 1/2 cup rye breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying (vegetable or canola)
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a large mixing bowl, combine finely chopped corned beef, shredded Swiss cheese, drained sauerkraut, and softened cream cheese. Mix until well blended and refrigerate for 20–30 minutes.
  2. Scoop tablespoon-sized portions of the mixture and roll into balls.
  3. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of rye breadcrumbs and panko.
  4. Coat each ball first in flour, then dip in egg before rolling in the breadcrumb mixture.
  5. Heat oil in a frying pan to 350°F (175°C) and fry balls in batches for 3–4 minutes until golden brown.
  6. Drain on paper towels and serve hot with Spicy Thousand Island dipping sauce.
